Pumpkin and Ranchero Chipotle Risotto
Hearty, winter- warmer recipe!
Every mouthful will delight the diner with risotto made with fresh pumpkin and the Chipotle just turns it into perfection.
Serves 4
4 Tablespoons of Ranchero Chipotle Salsa
2 Cups of vegetable stock
2 Cups of pumpkin cut in small cubes
2 cups of Arborio rice
1 spoon of butter
1 shallot fine diced
Method
Bring to boil your stock with the chipotle salsa, reduce heat., add your pumpkin.
In a large deep pan at medium heat sauté your shallot with the butter until clear, add the rice and sauté for 2 more minutes, start adding spoons of hot stock and reduce heat slightly. Simmer, stirring frequently until liquid is absorbed.
